When it comes to cooking, sometimes, you’re just not in the mood to make a massive effort. However, this doesn’t mean you have to reach for the takeaway menu or log into one of the many fast food apps available to us.

There are plenty of ‘quick and simple’ recipes that contain a long list of store cupboard ‘essentials’ which aren’t actually essential. But there are ways you can rustle up something in no time with minimal ingredients. Below you’ll find a range of quick and easy meals you can make with five or less ingredients.

Mac and Cheese

Time: 20 minutes

Serves: 8

Ingredients:

  • 450g of dried macaroni
  • 4 tablespoons of unsalted butter
  • ½ teaspoon of salt
  • 960ml of water
  • 450g of shredded cheddar cheese
  • 120ml of whole milk

An absolute favourite and guaranteed crowd pleaser. If you’re looking for something filling and comforting, then look no further than a classic mac and cheese. Easy to make with minimal ingredients and just one pot, this is sure to keep you satisfied.

Spaghetti and meatballs

Time: 15 minutes

Serves: 6

Ingredients:

  • 450g frozen meatballs
  • 230g dried spaghetti
  • 680ml pasta sauce (your choice)
  • 700ml water
  • 1 tablespoon olive oil
  • Cheese for serving (optional)

  • 450g beef or turkey mince
  • 400g enchilada sauce (your choice)
  • 2 green chillies
  • 10 soft corn tortillas
  • 340g grated sharp or medium cheddar

Ingredients:

  • 500g boneless and skinless chicken breasts
  • Jar chunky salsa
  • 60ml balsamic vinegar
  • 2 tablespoons chilli powder
  • 1 tablespoon ground cumin

Spicing it up a little more, this one-pot recipe showcases how a five ingredient meal can take as little as half an hour to prep and provides delicious results that’ll outshine your takeaway.

Spanish rice

Time: 35 minutes

Serves: 12

Ingredients:

  • 2 tablespoons olive oil
  • 1 yellow onion (chopped)
  • 4 cloves minced garlic
  • 760g uncooked brown rice
  • 2 cans diced tomatoes
  • 1 green chilli
  • 2 teaspoons osalt, or more to taste
  • 1 litre of water or vegetable broth

Whether you’re eating it on its own, or you want to add some chicken on the side (or partner it up with the enchiladas or tacos), this will bring colour and taste to your plate in an instant. Oh, and it’s vegan.

  • 320g dry red kidney beans
  • 285g dry brown rice
  • 260g salsa
  • ½ bunch oregano with stems and leaves divided
  • 720ml vegetable broth
  • 480ml water

  • 900g beef, turkey, or chicken mince
  • 2 tablespoons minced garlic
  • 400g passata
  • 800g red kidney beans
  • 2 packets chilli seasoning (your choice)
  • Salt and pepper to taste

Another hearty crowd-pleaser, this is one to bring to the table when you have friends over or great comfort food for a quiet night in.

Broccoli & cheese soup

Time: 15 minutes

Serves: 6 – 8

Ingredients:

  • 1 tablespoon olive oil
  • 1 yellow onion
  • 2 small heads broccoli
  • 960ml chicken broth
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper
  • 350g evaporated milk
  • 225g grated cheddar cheese

Perfect for winter or for lunch the next day (this freezes really well), this tasty soup brings has a wow factor, and costs a fraction of what a store-bought pot would.

Top tip: don’t be put off if you see a pressure cooker/slow cooker mentioned in the recipes above, these results can be achieved quickly in a large pot on a high heat, or slowly in the same pot on a low heat.
